WINERY

Just as palate pampering is one of the Basque Country’s cultural elements par excellence, so it is also one of our family’s. We’ve been tending the red-hot embers of our grill for 34 years now in the fishing town of Orio, where we are known for choosing only the very finest fish and meats for our grill.

However, our father always dreamt of being able to introduce our guests to his txakoli, an artisanal tradition passed down from one generation to next.

Hondarribi Zuri grapevines have framed the entrance to his farmstead since time immemorial and making our own txakoli to share with family and friends has been a long-standing family tradition.

Convinced that the txakoli we saw our parents make was something both authentic and truly ours, we of the new generation have decided to follow their dream. With eight hectares of vineyard and a winery overflowing with enthusiasm, it gives us great pleasure to invite you to take part in making our father’s dream come true with TXAKOLI KATXIÑA.

THE WINE-MAKING
PROCCESS

We make our TXAKOLI KATXIÑA using environmentally friendly “green” processes.

We ourselves do all the work in the vineyards, and we do it by hand so that each grapevine is cared for and treated individually throughout all stages of its development. Our selection of the grapes during harvest is fundamental to us being able to produce the very best version of our wine.

So that the selected grapes don’t lose any of their natural properties, we’ve chosen to make use of the very best technology available so that this variety’s characteristics can be maintained and transmitted as faithfully as possible to the wine we make.

TASTING
CARD

The characteristic green of our mountains and the blue of the Cantabrian Sea are melded together so that our TXAKOLI KATXIÑA will carry you away to its own particular universe of sensations, aromas, flavours and colours.

This wine's brilliant pale yellow colour is touched with emerald green hues. On the palate it is fresh, vibrant, with fruity aromas and sea-breeze notes. The aromatic intensity is well-distributed in the mouth and round on the palate, where it leaves a pleasant and lasting taste.

We recommend a serving temperature of between 7 and 10 °C. It combines very well with good-quality tinned fish, Iberian-pork-based appetizers, fresh seafood, salads, rice dishes and – if possible – with delicious grilled fish.

THE HONDARRIBI ZURI
VARIETY

The origin of this strain dates back to the early Middle Ages. Christian monks on the Camino de Santiago brought strains originating from Europe to the Basque Country.

Over the years, it adapted so well to the climate and soil of this land of mountains and seas that it eventually formed its own personality.

Hondarribi Zuri is the variety native to the Basque Country. It's an exclusive variety from which a wine as authentic as it is unique is created.

“In these lands, there have been numerous artists like Eduardo Chillida and Jorge Oteiza who have represented their peculiar point of view. IÑIGO MANTEROLA is one of our favourites.

Captivated by his works, we invited him to visit our winery so that he would delight us with some of his works. Once he met the family and toured the winery and vineyards, he had a very clear vision: he chose the grapevine and he represented it in a sculpture, thereby giving it the value that he gives to “TXAKOLI KATXIÑA”.
